Savoring the last of summer




Can it be fall already? There was a definite chill in the Colorado air this weekend. Before saying goodbye to the season, we wanted to celebrate summer once more, with a meal that contained one of her prized jewels - tomatoes!

I picked up about 3 cups of baby tomatoes, the sweet kind, and chopped them in half. Then I tossed the tomatoes with about 4 disks of feta cheese, broken into chunks, and added 3 cloves garlic, 2 T olive oil (extra virgin) and some garlic/herb seasoning. I baked all this in my trusty le creuset at 350 F for 15-20 minutes. I tossed with some cooked penne (1 lb), and added about 1/2 lb cooked, cubed chicken that I stir fried on the side (seasoned with McCormick's montreal steak seasoning).

Yum!
